This lot is processed in 96h semi-anaerobic honey, a controlled process that combines a partial gentle fermentation with drying under mucilage, in order to sublimate the aromatic complexity while preserving great clarity. The process requires precise control of temperature, humidity and air flow during each stage. In the cup, the sensory profile reveals an elegant florality carried by the rose, associated with the finesse of white tea and enhanced by a bright lemony acidity.
