ORIGIN El Salvador – Los Pirineos Bourbon Elite from Los Pirineos can be traced back to some of the oldest coffee trees in El Salvador – valued for their exceptional quality for almost 100 years. This washed coffee perfectly demonstrates how rich and balanced a bourbon can taste. In the cup you will find notes of cherry candy and cane sugar that provide a distinct sweetness. The taste profile is clear and defined, with a subtle hint of citrus as the coffee cools. At 1,400 meters above sea level, Los Pirineos is located on volcanic slopes, surrounded by lush forest. The microclimate around the volcano provides sunny days and cool breezes – ideal conditions for growing and drying coffee. In the farm's drying area, raised drying beds are placed between two mountain peaks, allowing the wind to continuously flow over the drying coffee. Our Bourbon Elite lot is washed processed. After harvesting, the coffee cherries are pulped with water to remove the pulp and skin. The washed beans are then slowly dried on the iconic raised beds overlooking the neighboring volcano.
