About This Coffee
Mauricio Duque is one of our newest suppliers, who had a large company in the past. But with the changing situation brought about by the pandemic, in 2020 his company ceased operations and he suddenly had the most valuable resource available - time. That's when he decided to fulfill his lifelong dream of growing the best Colombian specialty coffee in a sustainable and natural way. He began looking for a farm that suited his needs - especially those related to soil characteristics and altitude. He bought the farm near Neira (Caldas), which exceeded his expectations - hence the name of his business: Dulce Misterio (Sweet Mystery). The entire farm is 13 hectares and is 100% focused on coffee, ranging from 1850 m above sea level to 2040 m above sea level. The soil where the farm is located has very unique properties, where each individual crop has sweeter than normal properties, which can also be confirmed by measuring Brix Degrees in oranges, sugar cane and other fruits. When selecting the farm, he analyzed historical data from various competitions in Caldas, where he wanted to find out if there was a specific area from which most of the winning coffees came. The coffee is harvested only at optimal ripeness. He has growers who work with him year-round. These growers are trained in harvesting and are paid a fixed amount regardless of how much coffee they harvest per day. This means that pickers do not have the pressure or need to collect large quantities of coffee where unripe cherries would likely be present. The coffee is hand sorted, with unripe ones set aside and processed separately. The coffee is further washed to remove unwanted materials and poor quality beans and to make the coffee cleaner for the remainder of the process. The cherries are moved to closed plastic tanks where a 48-hour cherry fermentation takes place. The tanks are filled with 70 kg of cherries and have special valves to allow excess gas pressure to be released. The coffee is washed only once with plenty of water and moved to drying
