Jobo found Brayan Joven’s pink bourbon to match previous experiences with the variety. He leads with moderate gas to extend the roast length a touch, where he finds pink bourbons to be their best. Like with most roasts, he starts to step the gas down, but he chooses not to micro-manage the roast with mini steps. Instead, they’re a bit larger and less frequent. Jobo knows that no pink bourbon is the same at first crack. After a few test roasts, he finds that the optimal setting is early and soft. The beans start with a very faint crack, and it remains soft and controlled until the end of the roast. Just like some of the best pink bourbon roasts, the beans are wrinkly with a greyish brown hue
