Ombligon is a relatively unknown varietal that hails from Colombia but it has quickly gained a reputation of exceptional flavour. At the 2023 World Barista Championships, Australia’s Jack Simpson (who placed third) used Ombligon for his espresso, milk, and signature beverage courses. Similar to the gesha varietal, Ombligon beans are notably large and dense, indicating their high sugar content and flavour potential. Jhon Wilmer Cuellar grew up in the world of coffee, becoming a thirdgeneration coffee farmer in the beautiful region of Acevedo, Huila. His family has worked the land for years, and today, Jhon continues the tradition with passion. He has been focusing on coffee cultivation for the last 15 years, running a 10-hectare farm called Las Brisas, located at an altitude of 1,500 meters above sea level. What sets Jhon’s farm apart is his love for experimenting with new coffee varieties and processes. He enjoys working with traditional methods, but he’s also passionate about exploring newer fermentation techniques like oxidation and anaerobic methods. Each variety has its own process, and Jhon takes special care in adjusting fermentation times to bring out the best in every batch. For Jhon, the most rewarding part of coffee farming is the tasting process. After all the hard work of cultivation, processing, and drying, Jhon loves to sample the coffee and explore the unique profiles of each batch. His dedication to quality and innovation is what makes the coffee from Las Brisas stand out, offering a rich and flavorful experience for coffee lovers around the world.
