Colombia Las Perlitas Cinnamon
About This Coffee
It that time of the year again for special coffees! For this holiday season we have two lots, both with experimental processing. This lot is available from late November and will probably run out somewhere in the beginning of January, with its warm spice flavors it’s the perfect match for these dark days. The other lot is a very small batch of coffee and will only be roasted twice in December and is rather eclectic. These cherries are a group lot called Las Perlitas, aka Little Pearls, from around Santa Maria. It’s a selection of small harvests that would not have enough volume on their own to be exported, which would be a shame since they are all snapshots of their own unique terroir. All of them are are processed to the highest standards, with a nice touch of cinnamon through a very delicate and refined co-fermentation at the end. Usually co-ferments take over all other tastes in a coffee, here it adds a soft dimension of warm flavors. We found lovely cherry, ginger, plums and of course cinnamon. A note from our supplier, The Coffee Quest: In Spanish, Las Perlitas means “Little Pearls,” and throughout the harvest, it’s quite common for smallholders in Colombia to produce lots that aren’t large enough to be exported on their own. However, the quality is often just as good (or even better) than that of larger lots. As such, we purchase all coffees scoring 86+ points, regardless of size, and create a larger, export-size lot based on cup score and profile. The result is Las Perlitas Fruity Profile, a celebrated Washed coffee composed of small lots from producers in Huila. Behind this lot are dedicated farmers like Deiro Gasca, Lizardo Imbachi, Erik Bravo, and Delfin Carvajal, whose farms, situated at elevations of1,600 to 2,000 meters. The “Fruity Profile” lot differences from Las Perlitas Pink Bourbon as it’s a blend of different fruity Colombian coffee varieties, such as Red and Pink Bourbon, Chiroso, Caturra, Tabi. Our selection process is extremely rigorous. Every small lot is cupped multiple times before being included in the final blend. In addition to ensuring cup quality, each coffee must meet strict physical criteria, including moisture content and water activity, in line with our stringent guidelines. Our coffee comes in craft paper bags which contain a plastic liner on the inside to guarantee freshness of our coffee. Please dispose properly at your local plastic trash container. The Village Coffee is roasted fresh every week, and best consumed within four weeks after roast date. Store your coffee in a dry, dark and cool place, avoid the fridge.
