Reminds us of a co-ferment but is actually clean with low funk! This coffee has been fermented for 60 hours.  Bright and playful, this cup leads with a strawberry bon bon sweetness and a lively, clarity you would not expect with 60 hours of fermentation. When hot, expect medium acidity and a lingering strawberry finish. As it cools, the profile shifts gently towards a very subtle limey character, keeping things balanced without becoming too wild. The reason we love this coffee is its not too wild! Not funky or boozy.  Throughout, the cup stays focused and straightforward, celebrating pure fruit expression! Easy to extract.
