About This Coffee
About the coffee: This coffee comes from the micro-lot program of the Aruco cooperative in Corquin, western Honduras. The producers involved in the initiative deliver their cherries to the processing station further down the valley, where the weather conditions are more stable and the farmers' harvest is processed together. There are two reasons for this - on the one hand, the uniform processing of the coffee at a controlled high level, and on the other hand, to help the farmers minimize risks during processing. In total, over 200 producers participate in the cooperative, 34 of whom contribute to the micro-lot program. In addition to technical assistance on cultivation, harvesting and good agricultural practices, the farmers are also supported beyond this, for example through organic certification, which is organized by the cooperative. About processing: After the cherries arrive at the processing station, they are sorted according to their sugar content (measured in degrees Brix) and assigned to the various processing methods. For this lot, they are cleaned, wet (washed) processed and then sorted. Finally, they are placed in tents to dry and turned regularly over the entire drying period (approx. 15–20 days).
