About This Coffee

This exceptional coffee comes from the heights of Haraz, in the Wadi Al-Sharif valley in Yemen, at 2,450 meters altitude. From the ancestral Mocha variety and harvested in February 2025, it is produced by Saleh Ghaleb Al-Harazi, a discreet but brilliant pioneer of the new wave of Yemeni coffee. His know-how, nourished by ancient traditions and a unique experimental approach, makes him one of the few producers in the world capable of mastering the Hydra Reviva Process, an exclusive process combining slow initial drying, controlled rehydration, anaerobic fermentation in barrels and then final precision drying. After a first drying of 16 days in the shade on raised beds, the beans are gently rehydrated in a semi-closed chamber with misting, in order to reactivate their internal enzymes. It then ferments for seven days in airtight barrels at a stable temperature, before returning for 16 additional days on raised beds with meticulous handling every five hours to perfect stabilization. In the cup, we find notes of dates, orange zest and tamarind. A rare, sweet and deeply expressive coffee, sublimated by a complex process.
