About This Coffee
After removing impurities from the coffee cherries, pulping is performed. It is put into a closed tank together with the fermentation culture medium, and fermentation is carried out for 150 hours. The drying process is carried out in direct sunlight for 2-3 days and in the shade for 12-13 days to achieve the target moisture value. The mellow acidity like lime juice, the coolness like mint, and the sweetness reminiscent of syrup are enhanced.
