About This Coffee
It starts with a thick sweetness reminiscent of green banana and muskmelon soft serve ice cream, then cools down to a chocolate mint coolness, with lingering tropical notes of lime,muscat, lychee, and passion fruit. Nectar Citrullus - This process involves using spices and fruits to create a mother liquor with an ideal pH and sugar content (Brix) through 144 hours of fermentation. After the mother liquor is complete, the pulped coffee is placed in sealed 200-liter containers, and the mother liquor is added for a second fermentation. This second fermentation takes 140 hours, during which the sugar content is maintained above 9 and the pH above 4. Although the taste is reminiscent of green, this coffee is unique in that it has a rush of various fruity flavors, and is very popular in coffee shops that carry our coffee.
