About This Coffee
Hacienda La Esmeralda is arguably the originating force for geishas rise to prominence in the 2000’s. During the 2004 Best of Panama competition, the Peterson family had done something different and submitted lots based on separate areas of their farm. One particular lot was 100% geisha where it amazed everyone with its incredible intense fruit-foward and floral qualities. It went on to win the 2004 Best of Panama competition and set the world record price at the time for a coffee at an auction. Today they continue to produce incredible coffee and we are excited to sharing them with you. From Hacienda La Esmeralda: “FC is our cold fermented (F) with climate controlled drying (C). Our cold fermentation is done in stainless steel rotating tanks allowing inherent native microorganisms to ferment anaerobic and aerobically at 16 C for anywhere between 1 to 15 days. Climate controlled drying is done using our raised bed indoor facility which allows the coffee to dry at a temperature 19 C, with less than 50% ambient humidity and constant airflow for 10-15 days.”
