About This Coffee
Hachi coffee project continues to showcase the cutting-edge scientific practices developed by Diego Bermudez being combined in junction with the quality crops of great farms. Hachi is a testament to the power of biotechnology and agroforestry, showcasing the power of collaboration in coffee production. We are very excited and honoured to be able to share the literal fruits of labour from this exciting project. The cherries for this coffee were sourced from the El Peñon farm by producer Rubén Gomez. They cherries are pulped before being adding in a fermentation must (mossto). This must is made from the juices and pulp of geisha coffee that had undergone a carefully controlled fermentation for 48 hours. As a result the flavour precursors and other microbial metabolites from the geisha are introduced to the pink bourbon to create a unique harmonized profile.
