DIDIMO GUZMAN -Castillo- / Colombia
About This Coffee
This is the epitome of Castillo. It has a juicy and well-balanced navel orange flavor, and a hint of loquat in the aftertaste. It is a Castillo-like coffee with a firm sweetness that lingers like a caramel candy. The La Brasilia farm, located in the Alpes settlement of Gaitania, Tolima, is located at an altitude of 1760-1950m, an ideal environment for coffee cultivation. Of the 22ha, only 7ha are used for coffee cultivation, and the rest is allocated to pasture and spring water protection areas. Didimo Guzman, who manages this farm and has won the COE award, has been helping his father's farm since he was young and has been involved in coffee production. His motto, "Only move forward," is reflected in his daily careful work on the farm. He pays close attention to everything from cultivation, harvesting, processing, drying, and shipping, making use of his experience. In addition, he opened a road to the farm, reducing travel time between Planadas and Gaitania from half a day to less than an hour. It improved access to all neighboring farms and benefited the community. Recently, his 14-year-old son chose to take over his father's farm. This decision also contributes to the generational change issue in the Colombian coffee industry.
