Colombia Decaf comes from Colombia, from the Huila region, whose climate and conditions are favorable for producing quality coffee. The coffee grows at an altitude of 1400-2000 meters and is supported by several small producers in the region. The coffee is washed processed. The sugar cane process is used to remove caffeine. The solvent required to remove caffeine, ethyl acetate (EA), is made from sugar cane. EA, which is basically alcohol, is formed in the sugar cane fermentation process before being mixed with water. The coffee is steamed to open its cell structure and the EA/water solution can extract the caffeine without damaging the beans. The process takes 8 hours, and the solution is changed frequently to remove the caffeine. The finished coffee is steamed again to remove any EA residues before it is dried and polished for sale.
