Cherries are depulped and placed in sealed tanks, where limited oxygen slows fermentation just enough to deepen the cup’s character without weighing it down. The result is a clean, expressive profile that pairs the syrupy body of a honey process with tropical verve. Expect a layered cup with juicy tones of mango and stone fruit. Gentle nutty notes emerge as the cup cools, leveling its sweetness into a more balanced expression.
