What sets La Guaca apart is its sealed-fermentation red honey process: a method given to build sweetness and clarity in equal measure. Cherries are depulped and placed in sealed tanks, where limited oxygen slows fermentation just enough to deepen the cup’s character without weighing it down. The result is a clean, expressive profile that pairs the syrupy body of a honey process with tropical verve. Expect a layered cup with juicy tones of mango and stone fruit. Gentle nutty notes emerge as the cup cools, leveling its sweetness into a more balanced expression. La Guaca is a coffee that feels dynamic and bright, ending with a candy-like finish that lingers after the final sip.
