This lot is a special processed Pink Bourbon from Finca El Jardin in Tolima, Colombia. This is one of the only farms on our offer list that we haven't personally visited, but we trust the work that our Importers do, The Coffee Quest. The Pink Bourbon cherries are harvested at ripe sweetness, and then are depulped, and fermented in mucilage before being washed and dried on raised beds under shade until 11.5% moisture. This classic, yet modern processing elevates the intensity of this coffee, giving us a bright citrus fruit forward cup, but still sweet and a touch of spice
