About This Coffee
Nestor Lasso is now an essential producer at Tanat. A visionary third-generation young coffee grower, he is now recognized internationally for his avant-garde methods and his constant quest for excellence. The process: after a first sorting in water aimed at eliminating imperfect cherries, the fruits are carefully controlled, disinfected and then subjected to a 24-hour oxidation phase. They are then pulped before entering a controlled anaerobic fermentation of 72 hours, an oxygen-free process that accentuates aromatic complexity. The coffee is then washed and dried in the sun for about ten days until it reaches ideal stability. Thanks to his expertise and mastery of fermentation, Nestor signs here a fruity, harmonious and warm cup, perfectly representative of his style and know-how.
