About This Coffee
Most of the coffee beans produced at Monteblanco Estate are traditional Colombian varieties, which are now rare and no longer produced during the large-scale commercialisation of coffee in Colombia due to production difficulties. Claudia, the producer of Monteblanco, has been involved in the coffee industry for many years as a Q-grader herself, and through her years of research she has developed a production method that enhances the taste of these rare varieties. This is "Carbonic Maceration" in a bioreactor. Originally used as a winemaking technique, carbonic maceration is now being studied on many estates as the latest production method for fermentation in carbon dioxide-rich conditions. Claudia's production is based on years of her research, which has led to the management of production procedures and the precise control of temperature and humidity, ensuring that the resulting beans are of the highest quality.
