About This Coffee

Santa Catarina is in every way the result of a family's great passion for coffee. The farm – located at an altitude of 1275 meters in the Carmo De Minas region – is run by Sebastião Alexandre da Silva who, together with the rest of the family, does most of the work on the land. The family grows different varieties, of which this plot is a cherry-dried Yellow bourbon which has been fermented in various stages with a yeast strain developed from the company's own coffee berries. The stated goal is to give the coffee a tropical sweet character. Sebastião is on site every day, and we have seen for ourselves how hard he works to produce fantastic micro-lots. He conducts soil analyses, tests new ways of pruning the trees, develops post-harvest processes and creates shade trees for the coffee plants to create a balanced ecosystem. In the character of the coffee, we find a complex chocolate fullness that is balanced by a sweet fruitiness. All in alla a great coffee that develops well in all types of brewing methods.
