This natural Red and Yellow Bourbon from Villa Galicia, El Salvador, is the work of producer Mauricio Salaverria – a master of micro-lots and post-harvest precision. Grown at 1550 metres in the volcanic soils of the Apaneca–Ilamatepec mountains, the cherries are shade-dried for over 25 days, revealing tropical sweetness and layered complexity. Notes of pineapple, chamomile, and speculaas make this lively, complex cup unforgettable. What makes it even more remarkable?
