About This Coffee
Located at the foot of Mount Elgon is The Coffee Yard, a washing station run by Norman Mukuru and his team. Since 2018, the coffees from the districts of Sironko, Mbale, Bulambuli and Kapchorwa have been processed naturally (dry). With over 20 years of experience in the coffee industry, Norman is an expert in the field - Felix was able to see this for himself in 2024 when he visited The Coffee Yard on his origin trip to Uganda. About the processing: After the coffees are delivered, the cherries are floated (unripe cherries are light and float on the surface, ripe cherries are heavier and sink) and sorted out. The cherries are then spread out on raised beds to reduce the moisture content in a first step. Now the cherries are sorted again, this time according to color and moisture content. This creates batches that are as homogeneous as possible. Fermentation then takes place, depending on the lot either in sealed barrels or (as in this case) in open tanks. The cherries are then dried for approx. 21 days - again on raised beds - until they have a moisture content of less than 12%.
