About This Coffee
Carlos Aguilera Franceschi, a third-generation coffee producer (his grandparents Camen and Efrain founded Carmen Estate in the 1950s), and his partner Paul Langenstein have launched this project to experiment with various fermentation processes in coffee processing. They process the cherries from their own lots, but also from smallholder farmers from the region. The processing for this washed Geisha is called LPC or Long Play Coffee. The ripe cherries are brought to the mill as quickly as possible after harvesting. Special water-saving machines wash the skin and pulp from the cherries. The parchments are then anaerobically fermented in steel tanks at a constant 25 °C for 48 hours before being dried on African Beds for six days. They are then stored in a darkened environment until they reach their final moisture content.
