Bolivia Las Alasitas Gesha Honey Filter - Single Origin. This Gesha micro-lot comes from Las Alasitas farm, owned by the Rodriguez family. It lies on a lush, steep mountain valley outside of the town of Caranavi. Processed with a strong influence from the wine industry this lot demonstrates  impeccable cup quality. After being inspected and weighed, the coffee cherry is carefully sorted by weight using water, and floaters removed. It is then carefully ferme`nted anaerobically in a stainless steel tank for 48 hours. The fermented cherries are depulped, leaving as much mucilage as possible surrounding the seed. Fermentation expert Adrián Silva prepares a mossto solution with carefully calculated levels of the harvested bacteria or yeasts, and add it to the wet parchment within sealed stainless steel tanks, catalysing a controlled fermentation. It is removed after 48 hours and the wet parchment is then washed with fresh, clean water and carefully dried on raised beds, and also mechanically dried. Once optimally dry, the coffee is transported to La Paz where it is rested, and then milled at Agricafe’s dry mill, La Luna, which at 3800m above sea level, makes it one of the highest dry mills in the world. At this state-of-the-art mill, coffee is cleaned via colour sorters and also sorted by hand under UV and natural light.
