Natural Ka'u Maragogipe
About This Coffee
This special coffee comes from a lush, no-spray farm located high in the hills of Ka'u. The plum-sized red coffee cherries were irresistible from the moment we saw them. Coffees like this are a joy to harvest, maybe even indulgent. As such, this crop was selectively harvested, handcrafted, and processed for you by Kelleigh and Brandon, the founders of Big Island Coffee Roasters. While the coffee is primarily made up of Maragogipe -- a giant, notoriously flavorful coffee variety -- it's also comprised of similar large bean varieties, Pacamara (Pacas x Maragogipe) and Maracaturra (Maragogipe x Caturra). The ripe coffee cherries were dried whole and cured for several months to impart elegant fruit characteristics. A few days prior to roasting, they were milled, graded, and sorted in small batches. The result is a coffee with an array of fruit notes, both bright and deep. Maragogipe is one of our all-time favorite coffees, both to harvest and to drink.
