Terrazas Del Pisque
About This Coffee
Finca Terrazas del Pisque is a 38-hectare farm in the Pichincha region of Ecuador. Fifteen hectares are devoted to specialty coffee, the rest accommodating avocado and citrus trees to preserve biodiversity. The farm favors sustainable agriculture and harvesting at full maturity. Each lot is carefully worked, whether washed, natural or anaerobic fermented, in order to reveal the full potential of the fruit. Among the varieties, Pacamara, resulting from the hybridization between Pacas and Maragogype, seduces by the size of its grains and the richness of its aromatic profile. The Pichincha region, nestled in the highlands of northern Ecuador, offers an ideal climate for coffee. Despite a moderate altitude, the cool temperatures (around 18 °C) and cloud forests create unique conditions. The mild days allow for slow ripening of the cherries, while the cool nights stimulate the production of sugars, enriching the aromatic profile of the coffee. The presence of volcanoes and floral farms testifies to the richness of the soil and agricultural diversity. This combination of climate, terroir and local know-how gives rise to complex, sweet and balanced coffees, highly prized in the specialty market.
