They have more than a dozen Q-graders in Japan and in China to ensure quality control, and we work directly with the farms to bring the best specialty coffees from Yunnan to Japan. Keita Nakamura, head roaster, extracted and offered this bean to visitors at the Mountain Mover booth at SCAJ (Japan's largest coffee event) held in September 2025. ◉About the production area|Yunnan Province Yunnan Province is located on the southwestern frontier of China and is home to the largest ethnic minority population in the country. Bordered by Vietnam, Laos, and Myanmar in the south, the average altitude is around 1500-2200 m above sea level, and in the northwest by the Tibet Autonomous Region, the average altitude is between 3000-4000 m above sea level. Overall, the topography is complex, with large temperature differences between day and night, and the climate is diverse, resulting in a very rich flora and fauna, the largest number in the country. ◉About the farm|YUAN YI YUAN Coffee Farm YUAN YI YUAN Coffee Farm in Dehong, located in the north of Yunnan Province, is surrounded by mountains and has a unique basin climate.This time, MOUNTAIN MOVER collaborated with the Degwang Tropical Crops Research Institute to create a honey process fermented with a yeast specifically designed for coffee. The DeGuang Tropical Crops Research Institute is dedicated to improving coffee varieties and raising seedlings every year, and is also dedicated to coffee processing. ◉About the production process|Yeast Fermentation Honey In this honey process, ripe coffee cherries are first harvested, washed, and the coffee pulp is removed. Generally, the removed coffee pulp is used as fertilizer or as cascara tea, but in this refining process, the removed coffee pulp is collected and placed in a tank of water together with parchment coffee with mucilage. At the same time, a special yeast for coffee is added and the coffee is fermented for 150 hours. After fermentation, the coffee is not washed and goes directly to the drying stage.
