About This Coffee
These coffees are a limited release from Quills. This one is grown by Elias and Shady Barter, second generation producers of the El Vergel Estate. They are well known for their tireless experimentation in coffee production processes. This is a new "mosto processed coffee." The cherries undergo an extensive 72-hour anaerobic fermentation in tanks with lixiviates, or mosto. These are liquid byproducts of the fermentation that are rich in microbrials and give the coffee cherries greater complexity and extra flavor kick. “We always dreamed of creating the connection where people can drink coffee that comes directly from one farm, knowing who has grown the coffee." — Shady
