Layered, dynamic, and downright exceptional, this rare Whole Fruit Pacamara offers a cup unlike any other—vibrant, complex, and deeply satisfying. In each sip, you’ll find notes of wild blackberry crisp and mandarin marmalade, with a long, elegant finish of raspberry, maple candy, and kaffir lime. This is a one-time offering, crafted with intention using a natural whole fruit maceration process that elevates the inherent beauty of the Pacamara variety. After harvest, coffee cherries are carefully hand-sorted and floated to remove defects. They’re then placed in sealed containers without water to ferment for five days, allowing natural fruit enzymes to develop depth and dimension. Once fermentation is complete, the cherries are sun-dried on raised beds before the final milling reveals the dense, expressive beans within. Available in extremely limited quantities, this is the only time we will be offering this naturally processed Pacamara. Once it’s gone, it’s gone for good. For those who seek rare and remarkable coffees, this one’s not to be missed.
