About This Coffee
The ombligon variety, a unique and meticulously crafted coffee produced by Wilton Benitez, undergoes a detailed and innovative processing method. It begins with a careful manual harvest and selection based on size and density. The selected cherries are then sterilized, undergo a thermal step, and anaerobic fermentation with Saccharomyces cerevisiae var. diastaticus yeast to impart fruity aromas with spicy, citrus-forward notes. The coffee is then washed and dried at 38°C over 46 hours in controlled mechanical equipment, ensuring consistency and preserving the complex flavors developed during fermentation
