About This Coffee

The GUJI region, located in the southern part of Ethiopia, is known for its fertile soil and high-altitude coffee farms. The area produces some of the best coffee beans in the country, with a unique flavor profile influenced by the local terroir. The Buku Sayisa village is located in the WAMENA district, in the GUJI region. The Buku Sayisa washing station, located at an altitude of 2350 meters above sea level, is one of the highest coffee processing stations in Ethiopia. This coffee of ours is grown on small family farms in the surrounding area. The average farm size in this area is 2 acres and most of the coffee is grown in garden plots that also produce other crops. The farmers in this area cultivate the ancient Dega variety, therefore, unlike most specialty coffees of Ethiopia, this coffee is a single-variety Dega. This coffee is selectively hand-picked and processed using the washed (or wet) method. This means that the coffee fruits are pulped, fermented and thoroughly washed to remove the fruit and mucilage layers. This process results in a cleaner, brighter and more vibrant flavor profile compared to naturally processed (dry) coffee. The coffee beans are then removed and carefully dried on African beds while constantly turning to ensure a 'clean' drying from rot. This coffee has a unique taste profile, the flavors in the cup are very complex and the experience is different and special.
