Las Flores is part of the triangle of innovation alongside El Diviso and La Zarza, and has become a microclimate of experimentation, where varietal expression is shaped by precise, data-driven processing. This Java lot, cultivated above 1,800 meters, underwent extended anaerobic fermentation followed by a low-impact thermal shock, a technique designed to preserve aromatics while deepening the cup’s structural complexity.
