COLUMBIA GESHA WILDER LASSO
About This Coffee
I met Wilder Lasso back when he was my veterinarian. He said I was too stressed and gave me lavender treatment. He talked about a jewel, a Gesha, seemingly shy at first, but which hits you with a note of lemongrass, followed by notes of lavender and mango. I say we move the Lavender Festival from Bărăgan to the Bella Alejandría farm, located 1890 meters above sea level in the Huila region of Colombia. Actually a coffee producer, Wilder entered the world of coffee in a unique way and used his knowledge in genetics and energy to start a program in Tocora, which now includes more than 12 distinct varieties, carefully selected from different origins. This is a double fermentation lot, with 200 hours of submerged anaerobic fermentation in mucilage, which helps develop a remarkable floral and citrus profile. Subsequently, the beans are exposed to the sun for 18 days and stabilized in the Lasso warehouse in Tocora for 25 days before being ground. Geisha or Gesha? Anyway, I'm not good at writing, just smelling.
