About This Coffee
Waialua Twilight is our darkest roast. It's sweet with overtones of chocolate and spice, and a hint of berry and marshmallow. This Oahu coffee makes a great espresso or press pot coffee for dark roast aficionados! Waialua Twilight is a unique coffee that's fermented in the 'honey process' style, with the addition of white wine yeast. There's no honey or wine in the coffee - these are coffee processing techniques used by producers to naturally change (enhance) the flavors, mouthfeel, and shelf life of coffee. For hundreds of years, vintners have been adding yeast to their wine, while coffee producers have largely relied on wild yeasts for fermentation. In a coffee such as this, white wine yeasts have been carefully selected and added to the coffee cherry to enhance fermentation. This selective fermentation is new in the coffee industry and consistently has been shown to create higher scoring coffees. The wine yeasts create a super full-bodied, dark roast coffee by leaving molecularly heavy chains of sugar (polysaccharides) behind. They also extend the shelf life and add a hint of fruit flavor to the coffee.
