Óscar's pink bourbon lot is here a hearty example of traditional processing at its finest. The wet fermentation in tanks produce a lovely white grape-like sweetness that also acts as its primary acidic profile. We've developed this in the roaster to highlight the balance between sweetness and acidity but also to highlight this rhubarb pastry-like texture in the cup.
