About This Coffee

This exceptional Pacamara lot comes from Silvia and Guillermo Rojas, who grow exotic fruit alongside specialty coffee on their 4-hectare farm in Huila, Colombia. This Pacamara varietal started as an experiment for Silvia. Using seeds she found from her brother-in-law, Silvia planted the seeds at 1,650 masl on the highest part of their farm. Silvia and Guillermo have refined their fermentation techniques over time. Cherries are now oxidised for 36 hours before depulping, then the seeds ferment for another 36 hours in closed bags. This process results in a clean, sweet, and fruit-forward cup, letting both terroir and varietal shine. Expect notes of peach, grapefruit, and lime
